Veggie zucchini stew
Hi everyone, today I'm going to talk about my favorite meal, which is the zucchini stew.This is an original Italian recipe of a vegetable saute, that I took and adapted to a veggie version, changed the meat for soy protein, because I'm a veggie person, and because I'm a fussy eater too, I changed some ingredients like the red pepper for tomato.
I love this recipe because it is healthy for all the vegetables it contains, light, cheap, and this was the first recipe I learned to cook.
For prepare it we need:
Ingredients:( for 4 persons)
two zucchinis
one onion
one garlic clove
half cup of soy protein
two tomatoes
some spices: salt, ground black pepper, oregano(optional)
oil
Preparation:
1st step:
Chop the zucchinis in cubes, put it in a pot with warm water and let them boil for fifteen minutes, until they will be soft.Then strain it with help of, of course, a strainer, and back the zucchinis to the pot.
2nd step:
Add hot water in the cup with the soy protein, until the maximum capacity of the cup, and we let it rest for ten minutes, and strain it.
3rd step:
Chop the rest of vegetables in cubes.Stir-fry onion and garlic in a pan with oil, until these will be soft, then add the soy protein, tomatoes and spices.Stir fry for another seven minutes.
4th step:
Add the stir-fry to the pot with zucchinis and mix.
5th step:
Serve and enjoy
